πŸŽ… Christmas Cookies Recipes - BLOGMAS DAY 16 πŸŽ…

Cookies! One of my favourite sweet treats during the Christmas season! Today, I'm going to show you three really simple and delicious recipes for my all time favourite cookies! :)

Biscuits 
You will need:

  • 150 g plain flour
  • 1 pinch baking soda
  • 50 g caster sugar
  • 1 pack vanilla sugar
  • 100 g soft butter

Mix all the ingredients in a bowl and blend until you have a smooth batter. Cover your worktop with flour, roll the batter and start cutting out your biscuits. After that, place them on a baking tin and leave in the oven for about 12 minutes at 180°C.
When they're done, let them cool and then you can decorate them however you'd like! I covered them in chocolate and put gold, white and silver sprinkles on them!

Cinnamon rolls
You will need:

  • 60 g soft butter
  • 50 g cream cheese
  • 140 g caster sugar
  • 1 pack vanilla sugar
  • 1 egg yolk
  • 180 g plain flour
  • 1 pinch baking soda
  • 2 tablespoons melted butter
  • 2 teaspoons cinnamon
  • cling film

First, you will have to mix the 60 g butter and the cream cheese until smooth, then add 80 g of sugar, vanilla sugar and the egg yolk and continue mixing. Fold in the flour and the baking soda while mixing.
Roll the batter between two layers of cling film until it has a rectangular shape of about 20 x 30 cm. Remove the upper layer of cling film. Spread the melted butter onto the rolled batter. Mix the rest of the sugar (60 g) with the cinnamon; put one tablespoon of the mixture aside. Now cover the batter with the sugar-cinnamon mixture and start rolling it from the smaller side; cover the roll with the rest of the sugar-cinnamon mixture you've put aside.
Now leave the roll in the fridge for about three hours.
After the time is up, cut the roll into slices about one to two cm wide, put them on a baking tin and bake them for about 12 minutes at 180°C.
Let them cool and enjoy! :)

Linzer Cookies
You will need:

  • 400 g butter
  • 2 eggs
  • 100 g jam
  • 600 g plain flour
  • 200 g icing sugar
  • 2 tablespoons vanilla sugar

Start by mixing all the ingredients until you get a smooth batter and put it in the fridge for about an hour. 
Roll the batter and cut out cookies with a hole in the middle and cookies without a hole. Those will be your 'foundation' for the jam later on.
Bake them for about 10 minutes at 180°C and let them cool. Afterwards, spread the jam onto the cookies without the hole and put the ones with holes on top. I also covered the top cookies with chocolate but that step is optional!
